Marinated Cucumbers
2 long cucumbers, cut into 1/8-inch-thick slices
2 cups cider vinegar
2 cups water
1/3 cup chopped scallions (green onions)
2 tablespoons chopped fresh dill
2 tablespoons sugar
2 teaspoons coarse (kosher) salt
Freshly ground black pepper, to taste
Combine all the ingredients in a large bowl and mix well. Cover, and refrigerate for at least 3 hours. Drain before serving.

3/4 tablespoon cream
Salt & freshly ground pepper, to taste
1 tablespoon fresh chopped dill
2 teaspoons unsalted butter
Approx. 1 tablespoon diced prosciutto
